Mouthwatering Cupcake Recipes

I love desserts like cakes, muffins and other sweet treats. My favourite things to bake are cupcakes (even if I’m not always a pro at it).

So here is my collection of mouthwatering and easy-to-make cupcake recipes:

Chocolate Frosted Peanut Butter Cupcakes

Dough:
1 Package (18-1/4 ounces) yellow cake mix
3/4 cup creamy peanut butter
3 eggs
1-1/4 cups water
1/4 cup oil

Frosting:
1-2/3 cups semisweet chocolate chips
1/2 cup heavy whipping cream
1/2 cup butter, softened
1/2 cup confectioners’ sugar

In a large bowl, combine the cake mix, peanut butter, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.

Fill paper-lined muffin cups two-thirds full. Bake at 350 degrees for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Place chocolate chips in a large bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Cool, stirring occasionally, to room temperature. Add butter and confectioner’s sugar; beat until smooth. Frost cupcakes.

Buttermilk Chocolate Cupcakes with Owl Decoration

Dough:
1/2 cup butter, softened
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/2 cup water

Frosting & Decoration:
1 can (16 ounces) chocolate frosting
Oreo Cookies
1/4 cup vanilla frosting
Chocolate-covered peppermint candies
Small banana-shaped hard candies

In a large bowl, cream butter and sugar until light and fluffx. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt. Combine buttermilk and water. Add dry ingredients to creamed mixture alternatelx with buttermilk mixture, beating well after each addition.

Fill paper-lined muffin cups two-thirds full. Bake at 375 Degrees for 15-20 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Frost cupcakes with chocolate frosting.

Split the Oreos in half, keeping the cream side whole (microwaving a few cookies at a time for several seconds helps to keeo the cream side solid). Place the cookies, cream side up, on the cupcakes formeyes. Cut remaining cookie pieces into thirds; discard the center third and set the remaining aside.

With the vanilla frosting attach the chocolate covered mints for eyes; pipe pupils.

Place reserved cookie pieces above eyes for the ears. Pipe chocolate frosting on ears and around eyes.

Press the yellow candies in between the eyes as the beak.

Applesauce Spice Cupcakes

1/3 cup butter, softened
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3/4 cup applesauce
1 can Cream cheese frosting

In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the dry ingredients; add to creamed mixture alternately with applesauce.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 Degrees for 25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack. Frost cooled cupcakes.
